It was 1979 my dad came down the stairs and woke me let’s go it was only 4 am but back then you didn’t question your parents (wrong or right). So I threw on my cutoffs, a shirt and sneakers. He already had the pickup truck loaded with clam forks, 2cycle oil and dry ice. As we headed down river road I could see the sleepy site of Sikorsky Aircraft in the distance and the temperature always caused the fog to loom along the Housatonic and then into Devon route 110. He never said much but I guess he knew I loved this! As we headed toward the grated bridge we always stopped to see the old Lithuanian bait man and grab whatever we needed, jelly worms, Saran’s, silver queens or live bait. At the time, I was in summer school and finished with good grades so he put together a 1955 wolverine with a 25 HP Johnson outboard motor. We lived on the upper part of the river in Shelton and I had a good place to acclimate myself with the water. The boat even said Big Al on the back! As we headed through the grass path to the mouth of the river, I could see the Stratford Gun Club on the right of my bow just past the Jetty. We turned left to the shellfish bed threw out an anchor and got our gear. Do I stick my leg in, I’m wondering?? Oh!! that’s cold as dad handed me the fork and bushel basket. The sun was just starting to pop over the horizon as I thought about how much I liked this education! Dad taught me how to read a compass , know the marker buoy’s, and how to use the sonar for depth finding, it was awesome! By 9th grade I knew how to navigate the big pond, Long Island Sound. We dug a lot of clams that day and it was a great memory and great family values were taught to me! That is what I know.
If you are like me you’re probably missing a lot of people who you would like to be here for the holidays. Well so am I finding myself getting a little blue , snappy, aggravated . Happens to me every year at this time what should be a joyous time. Three things I always do is number one , Start the day on a positive note, number two , Do something special for someone who has it more difficult than you, and number three pray on what you believe to be you’re greatest strength or religion for me instead of standing I get on my knees bow my head and pray and purge that sadness out through many tears! When I am done there’s a feeling of being refreshed and sorrow has slipped away, That is how those you love help you feel better even though they are not by your side at this time but in spirit they certainly are. Well here we go. Our lives are busy, let’s face it. In today’s world you need two incomes to keep your head above water unless you make mega $’s. Between, the mortgage, oil, water, house insurance, taxes, cable, UI, car payments & car taxes, car insurance, gas for the car, food, and clothing things are very expensive. I am fortunate to have all these things but to make ends meet, you do what you can whether it is working overtime, cutting back on spending, shop at discount stores for food and try to use coupons to keep costs low.
I even signed up on some coupon sites to print coupons and it is such a hassle. Luckily, I created a separate email address for coupons because my inbox on the new email address is flooded with offers – some which are just ridiculous. Then there was an opportunity to earn money if you do surveys, sounds great? No! I took some surveys and they just try to sell you things. Then your phone number gets published and you are getting calls from these people to sell you things. I am looking to earn money not spend more. To top it off, my main # is my cell phone number, now they send texts to me with offers really?? – it is not what it is all cracked up to be.
You know If you don’t like where you live whatever the situation you do have the option to leave, I once left home when I was 14 and lived along the river during early fall here in the northeast. I hung out with the homeless, washed my hair in freezing cold streams, I begged people for food, spent my days in the woods . Sometimes It would rain all night and all I had was my jacket for shelter. I was cold , I was angry , I was hungry . But realized that many other people had the same problems as I did and sometimes you have to walk away from a bad situation to get a new perspective. That short two months of my life taught me that you can get by on the land and some kindness from strangers. If you ever find yourself thinking “I wonder what life would be like on my own” then try It! And maybe just maybe you will find yourself ! The worst thing would be never knowing. A. SHASTOKAS
This is another great protein packed recipe that only takes 30 minutes!
1teaspoon canola oil.
1lb. ground turkey 93 percent lean.
3/4 cup yellow onion, chopped.
3/4 cup red pepper chopped.
1 tablespoon chili powder.
2 teaspoons ground cumin.
1/2 teaspoon teaspoon ground oregano.
2 teaspoons garlic powder.
1 tablespoon tomato paste.
1 can (15 .5 oz.) black beans no salt added.
1 can (28 oz.) diced tomatoes.
In a large pot, heat the oil over medium heat. Add the Turkey Green pepper and onion. Cook until the turkey is lightly browned. Add the chili powder, cumin,oregano and garlic powder. Cook for 1 minute.
Add the tomato paste, kidney beans and diced tomatoes , Simmer uncovered for 15 minutes . serve as is with a dollop of sour cream or reduced fat cheddar cheese ! can be stored up to 3 days in a sealed container. Enjoy!
Hi, did you know that a large white turnip has only 50 calories! Not the tastiest raw but once cooked has a good mild flavor and it also has vitamin C and other nutrients but many American’s don’t try the healthy turnip and when paired with another root vegetable the sweet potato and garlic you can blend them into a very healthy rainy day soup.
So without any further ado let’s add this delicious benefit of health to your food regimen you can also add cumin or orange zest if you like.
One large sweet potato peeled and diced .
One large turnip Peeled and diced .
1tbsp balsamic vinegar 3 Tbsp Olive oil
8 cloves garlic whole and peeled.
2 shallots, sliced , 2tsp chopped thyme
4 cups chicken or veg stock.
1/4 cup white wine
Salt and pepper.
Heat oven to 400° line the sheet pan with Foil Heat oven to 400° line the sheet pan with Foil and spray lightly with cooking spray.
Combine root vegetables in a bowl with 2 tablespoons of the olive oil spread evenly on sheet pan and roast for 15 minutes.
In the same bowl toss the shallots garlic and thyme with remaining tablespoon of olive oil, after vegetables have roasted 15 minutes turn with spatula add garlic, shallots and thyme and cook for another 20 minutes, in a saucepan combine wine and stock, Bring to a gentle simmer and the roasted vegetable mixture and simmer until vegetables are very tender. Add mixture too a blender, (work in small batches if necessary) blend until smooth and return to pan on medium heat for several minutes stir in the vinegar and top with salt and pepper top with a dollop of yogurt or sour cream and shallots or scallion serves six .140 cal 4g protein 2g fiber and 270 mg of sodium.
